Easy chocolate almond biscuits

Hi guys ,

Im going to keep it really short and sweet in this post as I have been really busy with college staff but honestly the recipe I’m going to share is one of the best i have ever tried so far. These almond cookies are so tasty and melt into your mouth.

Here is the recipe:

i use normal size irish tea cup one

1 cup almond meal

1/4 of that cup

1/4 melted coconut oil

mix everything and make a dough , bake for 25 mins .

Put a pack of dark chocolate chips in a bowl and melt into the microwave. Coat the biscuits when they are ready and cooled down and set aside for a while then put in the fridge to chill .

Don’t eat them at one go :)


easy almond meal cookies

Been so busy today but last week i decided i will add one recipe each Thursday so didn’t want to miss that.

I decided to make these easy almond meal cookies , they are quick and easy to bake , you only need few simple ingredients as usual :)

Recipe :

2 cups almond meal

1 chia eggs to make vegan or a normal egg

punch of salt , baking powder and soda

1/4 of that cup stevia

2 table spoons coconut oil to make vegan or butter

1/3 cup dark chocolate chips

mix everything together, mold into cookie shapes and bake for 15-20 mins :)


Secret ingredient healthy chocolate brownies

I know today is Valentine’s day and whether you are single or taken you are attention is probably busy with it but i wanted to take the time to share the recipe for these very easy to make secret ingredient vegan chocolate brownies. It is always interesting to me how certain types of food that we would never think of putting together with others for making brownies go really well in making the perfect gooey texture.So the secret ingredient for these brownies is black beans - YES , you read that write - black beans :) . They are the perfect source of protein , vitamin B and fiber that can help reduce your blood sugar and improve cholesterol levels in order to maintain a healthy diet.

So here is the recipe and proportions.

1 cup drained black beans

1/2 of that cup oats ( i use glutenfree )

1/3 cup maple syrup

2 tea spoons stevia to make sugarfree or sugar

1/4 coconut oil to make vegan or oil of choice

pinch of salt , baking powder and vanilla

2/3 cup of dark chocolate chips

you will need a blender to mix everything together until the consistency looks smooth.

Bake for 15-20 mins

I promise you will never guess there are black beans in the brownies. We made our 3rd batch today. Can’t stop eating them :)


3 ingredients oats cookies

i decided to add another just three ingredients recipe here guys , Oats are brilliant option for breakfast because they fuel our body with slow release energy , which means you will be full for longer. Even better if they are in the form of cookies , you can even take some to snack on during the day.

Here is the recipe :

2 mashed banana

120 gm oats ( i used glutenfree )

50 gm dark chocolate chips ( you can use chocolate pieces or raisins if you like )

No need to add to sugar or similar substitute as the bananas and the choc chips help replace that .

Mix everything together

divide in small cookie shapes pieces

bake for 15 mins

and ENJOY :)


3 ingredients chocolate brownies

Hi everyone ,

I’ve been trying to keep ingredients as simple and minimal as possible when testing new recipes and really loved the way those brownies turned out yesterday. You will only need 3 simple products that you most likely have at home :

Recipe :

1 cup chocolate spread ( you can use nutella , i use so -free chocolate spread )

2 eggs

10 tablespoons flour ( i use glutenree one )

You can add 1/4 cup of milk of your choice

Bake for 15 mins

And there you have them , It is that simple :)


Quick and easy energy oats balls

I have been really busy lately as just started a new work placement and have been really getting into taking good care of myself by exercising daily and taking the time to spend time in the nature. Whenever I’m out on the go i like to make those very easy energy oats balls that take only few mins to prepare , there is no baking required . They are full of slow release energy ingredients that will keep you full for longer if you snack on them during the day.

Here is the recipe :

1 cup oats

1/2 cup peanut butter

1/4 maple syrup

pinch of salt

you can add dark chocolate choc chips if you want . mine on the pic below are coated in crushed almonds


Halloween butternutsquash blueberries muffins

We have been out of Ireland on Halloween for the last few years so i’m really excited for trick of treating this year. Along with all of the rest of the treats i have prepared for the kids for later on today i decided to bake some butternut squash blueberries muffin too .. They are very healthy , easy to make and rich in antioxidants. I actually love adding blueberries to muffins , they are my favorite as they add a lovely moisture and flavour to the end result.

To make them you will need :

1 large tea cup baked mashed butternutsquash

1 and 1/4 cup of flour ( i use gluten- free always )

pinch of salt, baking soda and powder

6 tea spoons of oil ( i use coconut oil )

1/4 of that cup milk ( i use coconut again )

1/2 cup of stevia ( you can use sugar )

3 eggs ( to make vegan you can use chia seeds eggs )

1/2 of that cup blueberries ( i coated mine in a bit flour before adding them to the whole mix )


Mix well , you should be able to make around 18 muffins . I had at home some pumpkin silicon molds so i usem them and i was really happy with the way the muffins turned out. They taste delicious as well .

Healthy Dark chocolate and blueberry muffins

Although i haven’t stopped baking It has been a while since i added recipes in the food section here so i thought i will share how to make these delicious guilt -free muffins . I love using vegan 85% dark chocolate and fruits when baking as it is a much healthier option to have when we have cravings to have something sweet . It took me a while until i figure out the right consistency for these babies but i have been really happy with this texture last few times . Me and my son made them last night and we demolished them in mins later they were ready :)

So here are the ingredients (For a cup you can use any big tea cup that you usually use just follow the proportions)

1 + 1/2 cup flour of your choice ( i use gluten-free)

1 egg ( or chia egg )

1 cup yoghurt

1/2 cup dark chocolate chips ( i use vegan 85% chocolate ones)

1/2 cup blueberries

1/4 cup milk of your choice ( i used cashew milk )

1/2 cup melted coconut oil ( you can see melted butter too )

1/2 cup Stevia ( you can use sugar but they won’t be that healthy then :) )

a pinch of baking powder, soda and salt

Method :

I mix the flour , stevia , blueberries, dark chocolate and the baking power, soda and salt first. Then add the egg , melted coconut oil, yoghurt and milk. Mix well and then pour into a small muffin tray half way through , you should be able to make around 10-12 muffins. Bake for 20-25 mins.

Vegan Chococate Oats Fudges

Few days ago i posted a picture of one of my favourite homemade  vegan oats protein fudges i like to have as breakfast  and a lot of you guys were asking of the receipt so i decided to share it with you here . I like having oats in the morning  as they are  slow release energy and keep your belly full for a very long time.  They  are raw, sugar-free , gluten-free , dairy-free and  provide high levels of protein and fiber  and have low levels of fat. Having them in the version of fudge bars is the perfect way to satisfy  sugar cravings as they are also a  perfect healthy  snack   for during the day.



They  are super duper easy and fast to make and require  only few  simple ingredients .

All you will  need is :

2 tea cups of gluten-free oats meal  (any tea cup will do , just follow the proportions ) .

3/4 of the cup Maple syrup

 1 cup of soaked in warm water for 1 hour raisins or pitted dates ( i used raisins )

1 soup spoon of cacao 

2 teaspoons of coconut milk 

1/2 cup   of  crushed hazelnuts to sprinkle on top and inside the mix 


Preparation method:

The first thing that you need to do is to soak the raisins  or dates for an hour in warm water . After draining them mix all of the ingredients in a blender until  you achieve a smooth consistency. Place the mixture onto a baking  tray or paper  and mold it into a  flat block. After that you just need to pop into the fridge for few hours and cut the block into pieces and they will be all  done .

It is that easy !
